I'm sharing a recipe I made for my Mother's Day supper last weekend. Everything was yummy and I will be making all the new recipes again! The dessert Lime Bars were YUMMY~I got this recipe off the Food Network, Down Home with the Neely's.
Neely's Lime Bars
Cookie Crust:
1 cup unsalted butter
1/2 cup confectioners sugar
2 cups all purpose flour
pinch of kosher salt
*i didn't have unsalted butter, so i eliminated the pinch of salt*
Lime Topping
4 large eggs
2 cups sugar
6 Tbsp all purpose flour
1/4 cup PLUS 2 Tbsp fresh lime juice(i used bottled)
2 tsp grated lime zest(don't have a zester)
confectioners sugar for garnish
Preheat oven to 350 degrees. Spray the bottom and sides of a 9x13 inch cake pan with non-stick spray.
To make the crust, combine the butter and confectioners sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed for 2-3 mins, until light and fluffy. Add the flour and salt, and mix another minute until well combined.*cook's note: you can prepare the dough up to 2 days in advance, then wrapped in plastic and stored in the fridge. When you are ready to bake the bars, simply bring the dough to room temperature and pat out into pan.
Transfer the dough to the prepared pan, and pat out to an even thickness over the bottom of the pan. Bake the crust for 20-25 mins, until lightly golden. Remove from oven, and cool on baking rack.
To make topping: whisk together the eggs and sugar in a large mixing bowl. Add the flour, and whisk until just combined, then whisk in the lime juice and zest. pour the lime topping over the cooled crust, then bake for an addtitional 25 mins or until the filling is set. Allow the bars to cool completely. Generously dust with powdered sugar and cut into squares. Leftovers will keep for 2-3 days at room temp or up to a week in the fridge.
*my personal note: Next time I make these(i will make again!) I would use a little green food coloring just for sake of being pretty~and I would refrigerate leftovers since it's getting so warm out. Also, I don't have a mixer with a paddle{sad face} but I used my mixer anyway...it was fine*

Yummy! That sounds like a perfect desert for summer! I'm guessing you didn't share a picture because it would be a picture of an empty pan. :) I've made lemon bars, but I'll have to try this with the lime.

Oh, sounds great! I will try those. Thanks for coming over to visit! We are hanging in there. Will has been really sick and we are all living in their really small rent house with most of our things in storage. It's an adventure! Never had anything in the lime pie family...very intersting. And it does sound like it would make a pretty dessert. Might have to give it a try next family gatherin'!
