Beef Jerky and some other stuff

I found this recipe on the internet and am still in the "tweaking" process to make it work for our taste but enjoy!

5# hamburger
4 1/2 tsp non-iodized salt
2 1/4 tsp Accent season
3/4 tsp garlic powder
1/2 tsp crushed red pepper flakes
2 1/4 Tbsp meat tenderizer
3/4 Tbsp Black Pepper
3 Tbsp brown sugar

Mix all of this well. Press into strips with a jerky gun(mine came with my dehydrator and I highly recommend them). Then mix up 1/2 cup worcestershire, 1/2 cup liquid smoke and
1/3 cup ketchup. I use a spoon and drizzle this mix over my strips of meat. Turn on dehydrator and let 'er rip! I dried mine 12-14 hours...just kind of watch it and see.

The last batch I made I used 5# hamburger that I bought in a tube(eeekkkk) at Wally World I think it was 70/30 and it was 5.99, I also bought a 3# pkg of ground turkey($3-4) and mixed in with it. So then I kind of did a 1 1/2 recipe...I'm not always the best at following exactly what recipes say...sorry! I found that we like more red pepper and garlic. For about $10.00 I made a pretty good batch of jerky, 2 1/2 dehydrators full. I would say I probably had 6-8 sandwich bags full. I'm going to watch my meat sales more closely and buy some more of the cheap stuff and turkey and save my Good beef for supper!


I've got to get pictures off all the equipment we have at the barn! It's CRAZY! This is going to be the biggest machinery sale we've had....looks like decent weather for Sat too...it was around 70 today. Too bad I was inside on a computer all day.YUK.

Well, I'm gonna shag outta here...headed upstairs to watch the CATS play some b-ball. GO KSU!

What I've been up to

Beef jerky...an important thing in our household...with ZB's diabetes...great snack, he doesn't have to take a shot to eat it! Pretty expensive to buy, I have 2 dehydrators and they were full last weekend!

Many things have been on my agenda since my last post. Mainly, just life in general. That seems to keep me busier than a long tailed cat in a room full of rockin chairs! ZB started indoor soccer on Monday night, 4-H model meeting(we did not make it there), Wednesday, cattle sale day, Thursday was ZB's band concert, Friday ZB and I went to the homecoming games, today it was family fun day at the sale barn--ha ha! Fed cattle and spent the day unloading farm equipment for our upcoming Consignment Auction on the 28th of Feb. I was busy filling out Bill of Sale forms, preparing titles, mainly busy work. Came home at 2pm and started more laundry. So glad to be home...but it's almost 8pm and I've got a pile of shirts staring at me"Iron me, Iron me!!!" I better get busy. Wow...Overflowing with Thankfulness. Need to work on that one. Human tradition and basic principles of this world...yep, they're EVERYWHERE! I pray that we can all keep our eyes on Jesus...he will never lead us astray. Some days will be easier than others, but press on, he is there waiting for us!!! Have a wonderful Monday!

Just Think About It...

Do YOU really BELIEVE that WHAT you BELIEVE is REALLY real? My cousin brought this to my attention a few weeks ago and it's played over and over in my mind since then. Think of the power of that statement?! Her Sunday School Class is doing a study and this statement was brought out the first week. Think about it and let me know your thoughts! I find it fascinating, convicting, exciting, puzzling. It makes me think about my faith and what am I doing or Not doing to help or hinder it!


I can't believe I've gone over a week with out posting. It's been busy, I had the stomach flu straight from the depths of Hell 1 week ago tonite. Wow...wasn't totally back to normal until last Friday. My good friend, P(BrokenY) called me to see if I needed sprite or gatorade! What a gal, it was funny in a way, I thought of her family and the "GREAT GREEN FUNK" that was in their home for a month off and on! Praise the Lord, no one else in my family got it. DH has had a bad sinus infection, my youngest son has changed schools(long story) and oldest son has been out of school yesterday and today with ridiculously HIGH blood sugars. Took him to the dr this a.m. and he's got a big fat sinus infection and bulging ear drums. He is a little better tonite but he is still having sugars that are too high. I hope it's bacterial so that the antibiotics will help him. We've been soooo busy at work---there are so many sick people. It's terrible.

Can you believe it's February already? So....what's the deal? Do you and your Valentine do a big "Hoorah" for Valentines day or is it just another day? For us, it's just another day. I think one of our first Valentines....I got new tennis shoes! And I was ok with that! JB has never bought me flowers...well, maybe once or twice. That is so ok with me. I know women that would have their britches in a bunch because they didn't get flowers. I think it's a waste...in a sense. I would rather buy lots of flowers to plant in the spring than have a bouquet for a week.
We love each other the same without all the fancy schmancy cards, chocolates, flowers etc. That's just not us. It is fun to go have a nice supper though!


Well, tomorrow is cattle sale day...should be fairly busy, the ice hurt us last week. Nothing but blue skies tomorrow baby! Have a great week. Lookin forward to hearing from all my bloggin buddies!!!
