Beef Jerky and some other stuff

I found this recipe on the internet and am still in the "tweaking" process to make it work for our taste but enjoy!

5# hamburger
4 1/2 tsp non-iodized salt
2 1/4 tsp Accent season
3/4 tsp garlic powder
1/2 tsp crushed red pepper flakes
2 1/4 Tbsp meat tenderizer
3/4 Tbsp Black Pepper
3 Tbsp brown sugar

Mix all of this well. Press into strips with a jerky gun(mine came with my dehydrator and I highly recommend them). Then mix up 1/2 cup worcestershire, 1/2 cup liquid smoke and
1/3 cup ketchup. I use a spoon and drizzle this mix over my strips of meat. Turn on dehydrator and let 'er rip! I dried mine 12-14 hours...just kind of watch it and see.

The last batch I made I used 5# hamburger that I bought in a tube(eeekkkk) at Wally World I think it was 70/30 and it was 5.99, I also bought a 3# pkg of ground turkey($3-4) and mixed in with it. So then I kind of did a 1 1/2 recipe...I'm not always the best at following exactly what recipes say...sorry! I found that we like more red pepper and garlic. For about $10.00 I made a pretty good batch of jerky, 2 1/2 dehydrators full. I would say I probably had 6-8 sandwich bags full. I'm going to watch my meat sales more closely and buy some more of the cheap stuff and turkey and save my Good beef for supper!


I've got to get pictures off all the equipment we have at the barn! It's CRAZY! This is going to be the biggest machinery sale we've had....looks like decent weather for Sat too...it was around 70 today. Too bad I was inside on a computer all day.YUK.

Well, I'm gonna shag outta here...headed upstairs to watch the CATS play some b-ball. GO KSU!

Yum!!!! I have a dehydrator at school, but I have not really used it yet. I don't have a jerky gun.... so what other ideas do you have? ;)

Well, you could pat it all out thin and use a pizza cutter to cut into strips...oooorrrrr I would probably hit a Cabela's, Sportsman's Warehouse, Bass Pro store and buy a jerky press...they are awesome!!!!

Thanks for that recipe! dh was just saying the other day that he hadn't had any jerky in a while and the store bought stuff is so expensive and nowhere near as good as homemade!

My Oldest DS was quite the jerky maker. We have never made it out of HB...interesting....waiting for the posting of the results.

CountryGirl and I just might show up on your doorstep what a hoot that would be! :)

Started reading your recipe and thought, "FIVE POUNDS?! - That's a lot of jerky." Sounds pretty good. Cole and I will have to try out your recipe.

We're a jerky loving family! Our dehydrator volleys between that and dried apples all fall...24/7. With the exception of the backstrap and tenderloin, the entire deer becomes jerkey. Never made it from hamburger before - have to try that.

Thanks for dropping by, can't wait to see the pictures of your barn. Btw, what town is your sale barn at, we were going to go to Jamison's Bull sale last Friday, but weather didn't permit that. They are at Quinter, KS are you close to that?

Sounds great! I used to have a dehyrator years ago, may need to get another one! I've never heard of a jerky gun!
